MEET THE CHEF

Born in Brazil and raised in Italy, Chef John Braga’s love for authentic Italian cuisine began in his mother’s kitchen. Inspired by her skill and dedication, he mastered traditional recipes and developed a passion for creating dishes that celebrate the beauty of simple, quality ingredients.
At the age of 24, John moved to New Jersey, where he quickly rose to become sous-chef at some of the finest establishments in New York and New Jersey. His career highlights include serving as a personal chef for the owner of the Empire State Building and cooking for notable clients such as Ladybird Johnson, the Dallas Cowboys, and stars like Frank Sinatra, John Travolta, and Sandra Bullock.
Reflecting on his journey, Chef Braga shares, “I was just grateful to have a job and lucky to meet amazing people. Little did I know, I’d one day cook for them too.”
In June 2012, Chef Braga and his wife Roxana, who serves as the restaurant’s accountant and marketing director, acquired Milano Trattoria in Georgetown,Texas. With every dish, from handcrafted pastas to the award-winning Italian Osso Bucco (voted “The Best in Austin, TX” in 2008), Chef Braga brings a wealth of experience and passion to the table, ensuring each meal is prepared with care and tradition.
